Lauren Scholl

Founder & Head Coach

Mom of 2 boys, 3 dogs, on a mission to live life to its fullest. With a background in competitive dance and fitness, my body has always been a top priority. Before I had the proper training/education, I tried every “trendy” diet. I experimented with all fitness programs from P90X to Orangetheory (where I also coached).

It took me years to realize that none of these programs were really giving me the results I was chasing. I started to understand that there was something deeper going on. My doctors continued to tell me that my labs were "normal", but in my heart I knew I shouldn't have to settle for this. I needed answers.

I was diagnosed with Psoriatic Arthritis at the age of 26 and Hashimoto’s at the age of 30. It made sense now- my body was constantly inflamed. The years of dieting caused hormonal imbalances along with an adapted metabolism. Over the years I obtained many certifications and devoted my studies to understanding hormones, inflammation, and metabolism at the deepest level. I invested in functional testing to help me target the root of my issues and find specific and effective solutions.  I made it my mission to help others do the same.

At the age of 37, I look and feel better than I did in my teens. I live life with balance- and feel grateful to have the energy to keep up with my boys as they grow up! My full-time focus is helping those who feel “stuck” and dismissed write their own success story through Defined Fitness & Nutrition.

Eager to meet my goal, I experimented with nearly every style of training and trendy diet that exists. Several years into my journey, I hired a coach and began competing in bodybuilding figure competitions where I learned about flexible dieting and tracking macros. I discovered my passion for results and the ability to coach others.

There isn’t a single diet or training style that works for everyone. Coaching requires attention to details and adaptation. My training style offers exactly that and allows my clients to have a balanced, healthy lifestyle, eating any and all the foods they could ever want while still getting the results.

Coaching holds a special place in my heart. I value each of my clients and find the best plan that works for you. My job is to teach you a lifestyle you can sustain the results we achieve together.

I am a personal training and group fitness instructor certifications through AAAI/ISMA and am certified in Biomechanics, Program Design and Nutrition through N1. I am also a certified Sports Nutrition Consultant, am TRX certified, and teach cycling classes.

I began my fitness career over a decade ago when I began teaching cycling and group fitness classes at my gym. I fell in love with inspiring others and the aspect of coaching individuals to see their greatest potential. After years of teaching, I eventually found myself working with the personal trainers in the gym and suddenly realized a strong passion for strength training, nutrition coaching, and human physiology. Over the years, I have helped hundreds of men and women take control over their health and fitness with education on quality nutrition and intelligent strength training as a way to enrich the quality of clients lives. I have a passion for helping others achieve the body and lifestyle they want, without sacrificing their happiness. When I’m not coaching clients, I am spending quality time with my husband and three young boys.

Alice Mitchell

Alice started training after experiencing a period of poor mental health whilst at university. After discovering not only the physical but also mental health benefits, she decided to take the leap and become a coach herself to help others discover the benefits!

Whilst many of us start training for the aesthetic element, she believes that by focusing on the way that living a healthy lifestyle makes you feel, you can find a routine that you will want to stick to long term! She also encourages her clients to find methods of training that help them to appreciate what their bodied are capable of to ultimately make the process even more rewarding!

Having competed as a Powerlifter, Alice has developed the knowledge to help clients not only achieve their fat loss goals but also fuel their bodies to perform better in training, sport and in life! Alongside her PT qualifications, she has gained Precision Nutrition L1, is a British Olympic Weightlifting Coach and GGS Woman's Coaching Specialist.

Whilst her health and fitness routine is more flexible these days around her own busy lifestyle, Alice still enjoys focusing on developing strength in powerlifting/weightlifting which keeps her motivated to maintain her training routine.

When she's not in the gym or coaching, you'll find Alice training Jiu-jitsu or exploring the amazing landscape she now calls home in Canada. But don't be confused when you hear her strong English accent as she's originally from the UK!

Ashley Folk

Ashley started her career in the fitness world with a passion for strength training, but her path quickly shifted when she began facing her own health challenges—chronic stress, gut issues, and hormonal imbalances. She knew there had to be more to feeling good than just hitting the gym, so she dove deep into functional nutrition and a more holistic approach to health.

Through learning to fuel her body properly, manage stress, and train smarter, Ashley experienced a complete transformation in how she felt—more energy, better digestion, and strength she could feel inside and out. That experience sparked her passion for helping others go beyond quick fixes and truly understand what their bodies need to thrive.

Now, as a Certified Functional Nutrition Coach, Pilates instructor, and personal trainer, Ashley works with clients to create realistic, sustainable plans that address nutrition, movement, and lifestyle habits. Ashley’s goal is always to make health feel approachable, empowering, and something you can stick with long-term—without giving up the things you love.

When Ashley’s not coaching, you can find her at a coffee shop, walking her dog, trying new recipes, or planning her next vacation.

Jon Dobzelecki

Growing up overweight, Jon was active and heavily involved in many different sports, but he could never figure out why the weight wasn’t coming off and he couldn’t reach a “normal size”.  After ballooning to 400 lbs in college, he decided to take matters into his own hands.  Through a structured dieting program and exercise, he dropped almost 200 lbs and became an avid marathon runner.  

Over the years, keeping the weight off took hard work and dedication both at the gym and in the kitchen.  Eventually, life happened – stress of climbing the corporate ladder, traveling week after week for work, and just losing focus on that previously healthy lifestyle. In December 2016 Jon decided enough was enough. It was time to refocus, re-prioritize, and put himself and his health first again. Jon made significant lifestyle changes which required major sacrifices – saying no to a glass of champagne at a wedding, avoiding the dessert table at a holiday party, spending Friday nights going for a run or taking a spin class. Jon was able to get himself back on track and “comeback” better and stronger both mentally and physically than before. This time though something was different, Jon became motivated to use his experience and own struggle to help others live their best life and achieve their own health transformation.

Alissa Farabaugh

Alissa was introduced to fitness and personal training at the age of 10. Raised by personal trainers, she developed a deep appreciation for strength training and quickly grew a passion for lifting.

As a teenager, Alissa struggled with yo-yo dieting and emotional eating. Through flexible dieting and tracking macros, she experienced a life-changing 80-pound fat loss transformation and entered the world of bikini bodybuilding. Her journey taught her resilience, discipline, and the value of focusing on being strong and healthy rather than simply being “skinny.”

Through her own fitness journey, Alissa also learned how to use training, nutrition, and structure to shift her mindset in all areas of life. She developed tools to better manage anxiety, depression, and stress, and to build emotional resilience, confidence, and self-trust — an internal transformation that now shapes how she coaches and leads others.

As Client Success Director at Defined Fitness and Nutrition, Alissa onboards new clients and guides them through the early stages of their journey. She helps clients step outside of their comfort zones in productive ways, take consistent action, and build momentum through accountability, structure, and mindset guidance.

Over the past eight years, Alissa has helped hundreds of individuals through in-person training, online fitness and nutrition coaching, group fitness instruction, and mindset coaching, with an emphasis on flexible dieting, balanced lifestyles, and sustainable habit formation.

Outside of coaching, Alissa enjoys hiking, traveling, playing billiards, and immersing herself in personal growth and mindset development.
